What’s Actually In Your Bread? (And What We’d Never Use)
Bread is one of the oldest and most consumed foods in the world. It’s comforting, versatile, and a staple on most of our tables. But have you ever stopped to look at what’s actually in your loaf of bread?
From long ingredient lists to scientific-sounding additives, many commercial breads are packed with substances most of us wouldn’t recognize, let alone choose to eat. As more people shift toward healthy living, understanding what goes into your bread (and what doesn’t) is more important than ever.
At REEF, we believe in transparency, clean ingredients, and never compromising on taste or health. In this post, we break down what commonly goes into commercial bread and what we’ll never use in ours.
The Truth Behind Commercial Bread
Many supermarket breads are designed for long shelf life, not for health. That means they often contain:
- Preservatives
To make bread last longer on the shelf, manufacturers often add chemical preservatives like calcium propionate, sorbic acid, or potassium bromate. While these help prevent mold, some of them have raised serious long-term health concerns. Based on this study by John Warner, quoted by the NIH – ‘according to some observational studies, there are associations between high emulsifier intake and cardiovascular disease. Potentially, they are a ticking time bomb for adult obesity, metabolic syndrome, cardiovascular diseases, mental health disorders and cancers’.
At REEF, we believe that fresh bread shouldn’t need synthetic preservatives. Instead, we use natural techniques and ingredients to maintain quality and freshness, so you can enjoy your bread without worry.
- Artificial Sweeteners and High Fructose Corn Syrup
Many commercial breads, even those labeled “whole wheat”, contain added sugars or sweeteners to enhance flavor. High fructose corn syrup (HFCS) is a common one, linked to obesity, metabolic issues, and increased sugar cravings.
Our philosophy is simple: if we don’t need it, we don’t use it. REEF breads contain NO added sugar; the only sweetness in our breads is from the all-natural, whole grains used to make the bread.
- Bleached or Refined Flours
White bread is made from refined flour, which has been stripped of its bran and germ, the parts that contain most of the fiber and nutrients. Some white breads even use bleached flour, treated with chemicals like benzoyl peroxide or chlorine.
REEF uses only whole grain, or naturally enriched flours. These are higher in fiber, richer in nutrients, and far better for your gut and long-term health.
What We Believe Bread Should Be
Bread doesn’t need to be complicated. It should be made with wholesome, recognizable ingredients – nothing more, nothing less. Here’s what we do use:
✅ Whole Grains
Whole grains are at the heart of all our recipes. They’re rich in fiber, vitamins, and minerals. Whether it’s whole wheat, barley, oats, or brown rice, we use grains that nourish your body and support digestive health.
✅ Leavened with Natural Yeast
At REEF, we use natural yeast in our breads instead of artificial leavening agents. This method allows for a slower, more natural fermentation process that enhances flavor, improves texture, and supports easier digestion. Unlike mass-produced breads that rely on chemical additives for a quick rise, our natural approach gives the dough time to develop, resulting in a more wholesome, gut-friendly loaf.
✅ Clean Label Ingredients
Less is more! You’ll recognize every ingredient on a REEF bread label because that’s how it should be. We don’t use artificial flavors, colors, or additives. Just real, honest food.
✅ Plant-Based, Always
All REEF breads are 100% plant-based and vegan-friendly. No eggs, no dairy, no animal-based enzymes – just ingredients that come from the earth.
Ingredients You’ll Never Find in REEF Bread
We’re proud to say no to the shortcuts and fillers used in conventional baking. Here’s a list of ingredients you’ll never find in our products and why:
❌ Potassium Bromate
Banned in many countries, this chemical is used to strengthen dough and promote a higher rise. It’s also considered a potential carcinogen.
❌ Mono- and Diglycerides
These emulsifiers help extend shelf life but are often made from animal fats and can be heavily processed.
❌ Artificial Dough Conditioners
Compounds like azodicarbonamide (ADA), often used to “condition” dough, have raised health concerns and are banned in the EU and Australia.
❌ Artificial Colors or Flavors
We believe bread should taste and look great naturally. There’s no need for caramel coloring or lab-made flavor enhancers.
❌ Hydrogenated Oils
Used for texture and stability, these oils can contain trans fats, which are linked to heart disease.
Reading Bread Labels: What to Look For
If you’re shopping for healthier bread, here are a few quick tips on what to watch for, that we also mentioned in a separate post:
- Short Ingredient List – Look for fewer than 8 ingredients, ideally ones you recognize.
- Whole Grain First – The first ingredient should be a whole grain (e.g., whole wheat flour).
- Low or No Sugar – Aim for breads with 0–2g of added sugar per slice.
- Fiber-Rich – Choose breads with at least 2–3g of fiber per slice.
- Preservative-Free – Look for brands (like REEF) that avoid synthetic preservatives.
Why It Matters
Choosing better bread isn’t just about avoiding harmful ingredients, it’s about making better daily decisions for your health and well-being. Bread is something many of us eat every day. When it’s made with quality ingredients, it can be a powerful source of nutrition, not just empty calories.
With more people choosing healthier lifestyles, there’s a growing demand for transparent, whole food-based, and minimally processed options. At REEF, we’re proud to be leading that change in the UAE.
Final Thoughts
Not all bread is created equal. While some are filled with artificial preservatives, sweeteners, and processed flours, others, like ours, are made with purpose, passion, and only what you actually need.
The next time you’re shopping, flip over the label. Ask yourself: do I recognize these ingredients? Are they good for me? If not, it might be time to switch to a bread brand that puts your health first.
At REEF, we say: Not every loaf is REEF. But every REEF loaf is made with the ingredients your body (and tastebuds) will thank you for.
